Baked Potato Rolls

Baked Potato Rolls - Sour Cream and Chive

Fun rolls that taste reminiscent of a sour cream and chive baked potato. Pretty good.

1 3/4 c mashed potatoes
1/4 c butter
1/2 c sour cream
1/2 c milk
1 t salt
1 egg
1/2 c chopped chives
2 1/2 t yeast
5-6 c flour

Boil and mash potatoes. Mix with butter, sour cream and milk until creamy. Check the temp - you want it to be 110 degrees for the next part. Add egg, yeast and chives. Then add 2 cups of flour. Mix until smooth. Allow to rest uncovered 10 minutes. Add salt, then slowly add the rest of the flour, 1/2 c at a time. When it gets to hard to mix, dump out and knead in the rest of the flour. It will seem like too much flour, but it isn't. Knead for about 10 minutes total. Spray a bowl, then put dough in - turn a couple times to coat the dough. Cover with plastic wrap and let rise 1 or 1.5 hours. Punch down, then shape into 24 rolls. Place on a sprayed cookie sheet or on parchment paper on a cookie sheet. Cover again and let rise another hour. Cook at 375 degrees for 20-25 minutes.
