Persimmon Pudding

Persimmon Pudding

This is an old Christmas dessert from my mom's family. It's not actually pudding - more like a persimmon loaf with sauces.

Pudding:

1 t butter, melted

1 c persimmon

¼ c millk

1 c sugar

1 egg

1 ¼ c flour

½ t salt

1 t baking powder

1 t baking soda

1 t cinnamon

dash of ginger

dash of allspice

1 c raisins

1 c nuts

Beat butter, persimmon, milk, sugar and egg. Mix in sifted dry ingredients. Then add raisins and nuts. Bake in ungreased loaf pan at 325 for 1 hour.

Sauces:

Hard Sauce

(I don't have this recipe - I think it's mostly butter, powdered sugar and vanilla)

Lemon Sauce

2 c water

1 c sugar

juice of 1 ½ lemons

1 heaping T cornstarch

2 T butter

Combine water, sugar, cornstarch and lemon juice. Cook until thick. Remove from heat and add butter. Serve warm.

Cream

Heavy cream unwhipped
