Risotto

Risotto

Just found this one and it turned out well.

1 T oil
1/2 small onion, chopped finely
dash of garlic salt
1 c uncooked rice
2 c chicken broth
2 c skim milk
1/2 c frozen peas, thawed but don't drain
1/4 t lemon juice
salt and pepper
1/4 c finely shredded parmesan cheese

Heat oil in a pan over medium/medium high. Add onion and cook about 3 minutes - until onion is tender. Add garlic salt then rice. Cook 1 minute. Add broth and milk. Cook 15-20 minutes on medium/medium-low heat, stirring often. It will be creamy, but the rice shouldn't get overly soft. Remove from heat. Add peas (with water), salt and pepper and lemon juice. Mix. Add cheese and mix lightly. Serve immediately.
