Peanut Butter Pie

Peanut Butter Pie

It sounds funny, but this is an old family recipe. I LOVE it. The custard by itself is a pretty good recipe for other pies or desserts.

1 c powdered sugar
½ c peanut butter

1 pie crust, store bought or homemade

¼ c cornstarch
2 c milk
2/3 c sugar
¼ t vanilla
2 T butter
¼ t salt
3 egg yolks

whipping cream or cool whip (to top)

Make a pie shell ahead of time. Mix peanut butter and powdered sugar in a bowl with a fork until crumbly. Sprinkle about ½ of the sugar/peanut butter mixture on pie shell. Set remaining aside. 

Mix remaining ingredients except whipping cream in a sauce pan and whisk briskly.  Break up the butter as you can, it will melt as you cook it.  Cook over medium heat, stirring constantly until thick. Pour into pie shell. Let cool completely.  Top with whipped cream and sprinkle on remaining peanut butter mixture. Chill until you serve it.
