Lemon Chicken

Lemon Chicken

This is a recipe from my mom that I changed a little to make it a little healthier. Usually you deep fry the chicken pieces, but I like to pan fry them with less oil.

Chicken:
1 lb chicken
1 egg
2 t cornstarch
1 t salt
1 t soy sauce
¼ c flour
2 T water
2 T cornstarch
¼ t baking soda

Cut up chicken into bite size cubes. Mix all other ingredients in a bowl, then add in chicken. Soak chicken in mixture for 30 mins. Fry in light oil or lots of sprayed oil.


Sauce:
½ c chicken broth
¼ c honey
3 T lemon juice
2 T corn syrup
2 T vinegar
¼ t garlic salt
1 T cornstarch
1 T water

Combine all ingredients except cornstarch and water in a saucepan and cook until boiling. Combine cornstarch and water separately then add. Stir quickly with a whisk until thickened. Serve on the side.
