Pudding Bread

1 1/2 Cup All Purpose Flour
2 Large Eggs
1/2 Cup Unsalted Butter melted
1/4 tsp Salt
1 tsp Baking Powder
3/4 Cup White Sugar
2/3 Cup 2% Milk
1 Package any flavor Pudding Mix (99g)

Dash sugar

Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan.
In a large mixing bowl, add your sugar, eggs, and butter and mix well together.
Next, add in your milk, butterscotch pudding mix, baking powder, and salt and mix together again.
Lastly, slowly add in your flour and fold the batter one last time. Once everything is mixed well and there are no clumps of flour. Pour the batter into the loaf pan.
Bake in the oven for 45-65 minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean!

Oatmeal Bread Rolls

Yummy and a great way to use up some oatmeal.

2 cups boiling water
1 cup rolled oats, traditional
½ cup brown sugar
1 tablespoon honey
¼ cup butter
2½ teaspoons table salt
1 teaspoon ground cinnamon
1 1/2 tablespoons instant yeast
5½ cups flour

In a large mixing bowl, combine the water, oats, brown sugar, honey, butter, salt, and cinnamon. Let cool to about 120-130 degrees.

Add the yeast and let proof a few minutes, then add flour, stirring to form a rough dough. Knead until the dough is smooth and satiny.

Transfer the dough to a lightly greased bowl, cover the bowl with lightly greased plastic wrap, and allow the dough to rise for 1 hour.

Divide the dough in half, and shape each half into a 12 rolls.  Cover again and let rise.

Bake in a preheated 350°F oven for 10-15 minutes, removing when golden brown.

Molasses Rolls

These are super yummy!  I took out some of the cocoa powder (kinda weird), but these are good.  Even good to freeze and save for a later meal.

1.5 T yeast
1 c water
1 egg
2 T butter
1/4 c honey
3 T molasses
1 T cocoa powder (or replace with flour)
1 t salt
1/4 c brown sugar
4 c 1 T flour (can replace up to half with wheat flour)

Combine warm water and yeast with honey.  Let stand.  Add all ingredients except 2 c of flour (this is the wheat flour is you're using it).  Add remaining flour slowly until dough pulls from the sides of the bowl.  Dump out and knead for 5-7 minutes, adding flour as needed.  Place in a bowl and let rise.  Dump out and form into 12 rolls.  Place in a greased 9x13 pan.  Let rise again.  Bake at 350 for 22-25 minutes (or until done).

Cheesy Pesto Rolls

Tried these from pinterest and they were delicious!  Made them smaller for this recipe so they weren't so huge!

1/2 c water
1/2 c milk
1 egg
1/2 c melted butter
2 T sugar
1 t salt
4-5 c flour
1 T yeast
1/2 c pesto (homemade or from mix, or premade)
1/2 c shredded  mozarella cheese

Warm milk and water to 120 degrees.  Add to sugar and yeast.  Let rise for 5 minutes.  Then add salt, egg, butter and flour.  Mix well, then knead.  Let rise.  Divide in two.  Roll out like a cinnamon roll.  Spread with 1/2 of pesto and half of cheese.  Roll and slice like a cinnamon roll and set on a baking sheet.  Repeat with second half.  Let rise again.  Bake at 375 for 15-20 minute, until done.

*Play with the amount of pesto and cheese.  Better a little too much than not enough.

Gyro Flatbread

Yummy and great for sandwiches!  Been looking for a good homemade version of this - reminds me of being in Jordan (okay, not as good as there, but still good).

1 T yeast
1 t sugar
1.5 c warm water
3 c flour
1.5 t salt


Mix yeast, sugar and 1/2 c water.  Let sit for 5-15 mins to activate the yeast.  In another bowl, add in flour and salt.  Pour yeast mixture into the middle of the flour and mix together, slowly adding in another 1 c water.  Keep stirring until mixed well.  Knead slightly if needed to keep it from being too sticky (but not for long)

Spray a bowl well and place dough into greased bowl (cover all of the dough in oil if desired).  Cover and let rise.  Once risen, knead dough on a floured surface for about 10 minutes, or until done.

Preheat oven to 500 degrees, and preheat cookie sheet or pizza tray (do not oil as it will only burn).  You can just put the sheets in a few minutes before it's ready - to get them to about 200 degrees at least, as preferred.  This is important though, to get it to cook properly.

Divide dough into 6 pieces.  Take a rolling pin and flatten each piece into a large circle or rectangle (whatever you like).  It should be about 1/4 inch thick if possible.  Remove heated trays from oven and spray with oil.  Place bread on the tray(s) and return to oven.  Cook for 5 minutes, then flip and cook an additional 2 minutes - should get cooked through.

Serve warm or keep in a ziploc bag within a day or two.

Biscuits

These are good.  I need to make them rise a little better, but they are yummy even when flat.  Make them a little wider and these are great to top Chicken Pot Pie, or Steak and Mushroom Pot Pie.  :)

3 c flour
1 1/2 t salt
1 T sugar
1 T baking powder
1 stick butter
3/4 c buttermilk
1 egg
1/4 c water or less

Combine flour, sugar, salt, powder and butter until crumbly.  Mix in buttermilk, egg and just enough water to make workable dough (handmix).  Mix until barely combined.  Roll onto floured board about 1.5 inch thick.  Cut with a 2 inch cutter or glass.  Place on greased baking sheet and bake at 425 for 12-15 minutes.  

Italian Cheesy Bread

I love getting this when we buy pizza, but it's so expensive.  This is a pretty good replacement and pretty easy.

Crust:


3/4 c warm water
1/2-1 T yeast
1.5 T sugar
2 c flour (ish)
1/2 t salt

Dissolve yeast and sugar in warm water in a mixer.  Let stand 5 minutes, until frothy and bubbly.  (If it doesn't do this, try again because you killed the yeast).  Gradually add in salt and flour while mixing.  Add enough flour until dough pulls away from the sides and makes a ball around the hook.  Remove from bowl and dump onto a floured area.  Knead slightly for 3-5 mins.  Let rise, covered in a bowl for 15 mins.  Roll out to pizza size.  Let rise 15-20 minutes.  Then move on to the toppings.


Toppings:

1 pkg Italian Dressing (dry mix)
1/8 c oil
1 cap vinegar
1/8-1/4 c water
dash salt
1/8 t garlic salt
dash ground oregano
1/8 t dry thyme
dash pepper
1 c mozzarella cheese (grated)

Mix dry dressing mix with oil, vinegar and water.  This is about half of the liquid that the mix calls for.  Mix well and set aside.  In a bowl, mix salt, garlic salt, oregano, thyme and pepper.  With a brush spread a good amount of the dressing mix onto the crust until covered well.  (You will not use it all).  Sprinkle the spices evenly.  Spread cheese evenly over the top.

Cook at 450 for 10-14 minutes, until done.  Cut into 12 pieces and enjoy!

Milk Bread

I tried this one out because it was supposed to taste like King's Hawaiian.  It didn't.  It's better!  Yummy sweetness - this may be my new favorite roll recipe.

1 c water
1/2 sweetened condensed milk
1 t salt
1 T butter
3 1/2 c flour
2 T yeast

Make sure water is between 105-120 degrees.  In a mixer, add flour, yeast and salt.  Add in water, butter and milk.  Mix.  Rinse out the measuring cup from the milk with about 1 T water and add that in.  Mix.  Dough will still be a little thick, but that's okay.  Dump onto a board and knead 2-5 mins.  Place in a greased bowl and let rise covered until doubled.  Cut into 12 pieces and roll into rolls.  Place in a greased 9x13 pan.  Let rise again, covered.  Cook at 350 for 12-15 mins, until barely turning brown.

Bread Sticks or CinnaSticks

3/4 c warm water
1 T yeast
1.5 T sugar
2 c flour (ish)
1/2 t salt

Dissolve yeast and sugar in warm water in a mixer.  Let stand 5 minutes, until frothy and bubbly.  (If it doesn't do this, try again because you killed the yeast).  Gradually add in salt and flour while mixing.  Add enough flour until dough pulls away from the sides and makes a ball around the hook.  Remove from bowl and dump onto a floured area.  Knead slightly for 3-5 mins.  Let rise in a bowl about 1 hour.  Roll out to pizza size (leave it at least 1/3-1/2 inch thick).  Cut in half and then into strips.  Place on greased sheets.  Let rise 15-30 minutes.

Brush on oil mixed with dry Italian Seasoning mix for bread sticks.

Brush on melted butter then sprinkle with cinnamon/sugar mixture for cinnasticks.

Pizza Dough/Pizza

I'm usually wary about this, but this one turned out great!  Easy, quick and good.

4 c flour (ish)
1 t salt

Dissolve yeast and sugar in warm water in a mixer.  Let stand 5 minutes, until frothy and bubbly.  (If it doesn't do this, try again because you killed the yeast).  Gradually add in salt and flour while mixing.  Add enough flour until dough pulls away from the sides and makes a ball around the hook.  Remove from bowl and dump onto a floured area.  Knead slightly for 3-5 mins.  Let rise in a bowl about 1 hour.  Divide into 3.  Roll out to pizza size (leave it at least 1/3-1/2 inch thick.  Place on greased sheets.  Let rise 15-30 minutes.  Add toppings as desired.

Bake at 425 for 10-12 minutes or until done.

Garlic Cheddar Biscuits

These are supposed to be a knock off of the Red Lobster ones.  It's been so long since I've been to that restaurant that I don't know if they're the same, but they are good.  Super quick and easy.

1 c flour
1 T sugar
2 t baking powder
1/4 t salt
1 t garlic salt
1/4 c cold butter, cubed
1 c grated cheddar cheese
1/2 c  milk

Mix dry ingredients in a bowl.  Add in butter and cut in until crumbly.  Add in cheese and milk, mixing until it is all wet.  Spoon into a greased mini cupcake pan.  Should make 22-24, depending on how full you make them.  Bake at 400 degrees for 8-10 mins, or until sides start to turn golden.  Let cool in pan 3-5 mins.  Serve warm.

Note:  I am sure there is a way to make them in regular cupcake pans - probably adjusting the cooking time to around 15-20 mins (guess), but I like them little so I haven't tried it that way.

Baked Potato Rolls

Baked Potato Rolls - Sour Cream and Chive

Fun rolls that taste reminiscent of a sour cream and chive baked potato. Pretty good.

1 3/4 c mashed potatoes
1/4 c butter
1/2 c sour cream
1/2 c milk
1 t salt
1 egg
1/2 c chopped chives
2 1/2 t yeast
5-6 c flour

Boil and mash potatoes. Mix with butter, sour cream and milk until creamy. Check the temp - you want it to be 110 degrees for the next part. Add egg, yeast and chives. Then add 2 cups of flour. Mix until smooth. Allow to rest uncovered 10 minutes. Add salt, then slowly add the rest of the flour, 1/2 c at a time. When it gets to hard to mix, dump out and knead in the rest of the flour. It will seem like too much flour, but it isn't. Knead for about 10 minutes total. Spray a bowl, then put dough in - turn a couple times to coat the dough. Cover with plastic wrap and let rise 1 or 1.5 hours. Punch down, then shape into 24 rolls. Place on a sprayed cookie sheet or on parchment paper on a cookie sheet. Cover again and let rise another hour. Cook at 375 degrees for 20-25 minutes.


Crescent Rolls

2 packages yeast
3/4 c water (110 degrees)
1/2 c sugar
1 t salt
2 eggs
1/2 c shortening
4 c flour
1/4 c butter, softened

Dissolve yeast in water. Stir in sugar, salt, eggs, shortening and 2 cups of flour. Beat until smooth. Mix in remaining flour until smooth. Knead dough, then cover it and let it rise in a warm place until double (1 or 1.5 hours). Punch down dough. Divide in half. Roll each half into a circle - 12 inches in diameter. Cut into 8 wedges each. Roll up wedges starting with the wide end and place on greased baking sheet. Cover and let rise until double (about an hour). Bake at 400 degrees for 12-15 mintues or until golden brown. Brush the tops with butter when they come out.

Barmbrack

Fantastic traditional Scottish bread. Usually made as a large circular loaf, but I like it as rolls.

2 packages yeast
½ cup warm water

5 cups all-purp flour
½ cup sugar
2 ½ tsp. salt
1 tsp. allspice

¼ cup soft butter
1 cup milk

2 eggs, beaten
¾ cup seedless raisins
¾ cup dried cherries or currants
½ candied citrus fruit pieces (pineapple, oranges, etc)
Foil-wrapped ring, coin, or button (opt.)
2 tbsp sugar
1 tbsp water

Dissolve yeast in water and set aside 5 min. Sift 2 cups of the flour with
the 1/2 cup sugar, salt and allspice together in a bowl. When yeast is done, add butter and milk to flour mixture along with the yeast. Beat for about 2 min with an electric mixer. Add beaten egg. Cover and set in a warm place (on top of the stove when it’s on is a good place) until doubled in volume - about 30 min. With a wooden spoon, beat in remaining flour 1 cup at a time. Knead on a well-floured surface for about 5 min., adding raisins,
currants, candied fruit and foil-wrapped charms as you go. Place in a greased bowl,
cover and allow to rise in a warm place until doubled. Knock down dough and shape into round rolls. Place on a greased sheet and allow to rise to double. Bake at 350’ for about 35-40 mins. Make a glaze with the remaining sugarand water and brush over barmbrack; bake an additional 5-7 mins. Serve as is or toasted.

Dinner Rolls

I got this one from my sister. I have a hard time getting yeast to rise for some reason, but these usually turn out for me.

3 1/2 c flour
1/4 c sugar
1/4 c butter, soft
1 t salt
1 T yeast (or one packet)
1/2 c water
1/2 c milk
1 egg

Mix water and milk in a saucepan. Heat slowly to 120 degrees. Remove from heat and add yeast. In an electric mixer, combine 2 c flour, sugar, butter, salt, egg and yeast mixture. Beat for one minute. Add the rest of the flour and mix. Knead on a greased and LIGHTLY floured surface for a couple minutes. Let rise covered. Shape into rolls in a greased pan. Let rise again. Bake at 375 degrees for 12-15 minutes. Add butter to the tops if desired.
