These are super awesome and light and wonderful. Top with whipped cream, or vanilla frosting!
¾ c all-purpose flour
1 tsp baking powder
1/8 tsp salt
1 egg white
1 tsp canola oil
1 tsp vanilla extract
1/3 c skim milk
¼ c granulated sugar
½ c diced strawberries, very small
In a small bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk together the egg white, oil, vanilla, milk, and sugar. Add in the flour mixture, stirring just until incorporated. Gently fold in the strawberries. Bake at 350 for 7-10 minutes, until done. Let cool and top with whipped cream or vanilla frosting.
