Pumpkin Pie

This is the way I like to make it. For those who are related this is not anyone's version but my own.

1 qt can pumpkin

13 oz can evaporated milk

1 c milk

1 c sugar

1 t salt

2 t cinnamon

1 ¼ t nutmeg

¾ t allspice

¾ t ginger

3-4 eggs (depending on size)

2 pie crusts

Place pumpkin in a large bowl. In a small bowl, combine all dry ingredients. Add dry ingredients to pumpkin and mix thoroughly. Beat eggs gently with a fork in the small bowl. Add some of the milk. Then add egg mixture to pumpkin mixture and blend. Add remaining milk and evaporated milk. Blend thoroughly. Pour mixture into two unbaked pie shells. Bake at 425’ for 15 minutes; reduce heat to 350’ and continue baking for additional 45 minutes. Pies are done when table knife inserted ½ way between center and edge of pie comes out clean. Cool before serving.
