Divinity
This one comes from my mom. You need to be careful about which day you make it on. If it is raining or too humid, it might not turn out. Also, only make it if you have a real electric mixer - not a hand mixer. You can burn out the motor on a hand mixer.
2 2/3 c sugar
2/3 c light corn syrup
½ c water
2 egg whites
1 t vanilla
2/3 c broken nuts
Stir sugar, corn syrup and water over low heat until sugar is dissolved. Cook, without stirring, to 260’ on candy thermometer (hard ball). In mixer bowl (use a nice mixer, not a cheap one or a hand one), beat egg whites until stiff peaks form. Continue beating while slowly pouring hot syrup in thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull (no longer glossy). Do not over beat. Mixture may become too stiff for mixture; if so, continue beating by hand with wooden spoon. Fold in nuts. Drop mixture by teaspoonful onto waxed paper.
