Zucchini Bread

Zucchini Bread

I got this from an old roommate in college. I love it!

3 c flour
1 c sugar
¾ c dark brown sugar
2 ½ t baking powder
1 t baking soda
1 t salt
2 t cinnamon
½ t nutmeg
½ t cloves
1 ¼ c walnuts (optional)
4 eggs
1 c applesauce
2 c grated zucchini

Preheat oven to 350’. Grease two 8x4 loaf pans. Stir flour, sugars, powder, soda, salt, cinnamon, nutmeg, cloves and walnuts together in a large bowl. Lightly beat eggs. Add the oil and zucchini to the beaten eggs and stir until blended. Add the egg mixture to the dry ingredients and stir until they are moistened and well blended. Divide mixture between the two pans, spreading it evenly. Sprinkle sugar on top. Bake 15-55 mins or until done. Invert bread from pans and cool completely.
