Brownies with Frosting

1/2 c butter
1 c sugar
1 egg
1 tsp vanilla
1/3 cocoa powder
1/2 c flour
1/4 tsp salt
1/4 tsp baking powder

3 Tbsp butter
3 Tbsp cocoa
1 Tbsp honey
1 tsp vanilla or another flavored extract as preferred (try peppermint, raspberry, orange, etc)
1-2 c powdered sugar
1-3 tsp milk (as needed)

  1. Preheat oven to 350 degrees F. Grease and flour an 8-inch square pan.
  2. Melt 1/2 cup butter. Stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  3. Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  4. To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, milk and 1 cup confectioners' sugar. Stir until smooth. Add and adjust the sugar and milk to get the right consistency.  Frost brownies while they are still warm.
  5. These freeze wonderfully!  Cut into squares and wrap individually in foil.  Pull out and let defrost overnight and enjoy!
