Great recipe for an easy marinade. Make it on the BBQ or in the oven!
3-4 chicken breasts
1/4 c brown sugar
1/4 c soy sauce
2 T lime juice
1/4 t chili powder
1/4 t curry powder
3 garlic cloved, minced
1/4 t powdered ginger
Mix all but chicken together in a bowl, whisking until smooth. Take chicken breast and either butterfly them or slice into thin pieces (about 1 inch thick). Place in a ziplock bag with marinade and refrigerate overnight, turning over every few hours. Cook on a barbeque or broil about 5 inches from the element for 10-20 minutes (until done but not dry).
Another option would be to cut chicken into smaller pieces, cook, then use it to top a salad or a homemade California pizza.
