Butternut Squash Bread

Butternut Squash Bread
I never would have tried this, but I got a squash a friend who grew it in their garden and so I tried it. It was great.
1/3 c butter
1/3 c applesauce
2 1/2 c sugar
4 beaten eggs
½ t baking powder
½ t baking soda
1/2 t nutmeg
2 c butternut squash puree
2 ¾ c flour
1 t salt
1 1/2 t cinnamon
¼ t cloves

To make squash puree, cut squash in half or in quarters, depending on size. Bake in oven at 350 for 45-60 minutes, until "meat" is tender. Cut out "meat" and mix in a blender with water and a tab of butter (if desired) until smooth.
Combine all ingredients and mix thoroughly. Beat with a mixer 2 minutes.
Pour into 2 greased 7x4 bread pans. Bake at 350’ for approximately one hour.
OR, pour into 2 greased cupcake sheets (24 cupcakes) and bake at 350" for about 30 minutes.
